Primal Health Paleo Banana Bread Recipe
I regularly make banana bread using the typical flour and butter recipe, so I was curious about the result of baking a Primal health paleo banana bread with coconut oil and coconut flour. The recipe has zero sugar, and the taste was better than any other banana bread I’ve had.
Following on from my Interview With A Primal Health Coach (which you can read by clicking here), Michelle (the primal health coach) sent me a recipe from Family Food.
Primal Health Paleo Banana Bread Recipe
Ingredients
- 3/4 cup of coconut flour
- 3/4 cup of almond meal
- 1 cup of melted coconut oil and extra for greasing the pan
- 6 eggs
- 1/4 tsp vanilla bean powder ( I used extract)
- 2 tsp baking soda
- 1/4 teaspoon salt
- 1 tsp cinnamon
- 5 ripe bananas ( I used 4 as that’s all I had)
- pinch of salt
- 4 1/2 tablespoons of honey
Method
- Preheat oven to 160 degrees C
- Grease a 20cm x 12 cm pan with coconut oil and line it with baking paper.
- Combine all the dry ingredients.
- Mash most of the bananas, save a bit and cut diagonally – this will go on top of the batter.
- Whisk eggs, vanilla, and honey in another bowl, and then stir in mashed banana.
- Combine the dry and wet ingredients and add the coconut oil. Mix well.
- Spoon the batter into the pan and add the cut bananas on top.
- Bake for 15 mins, remove from the oven and cover with foil. Return the pan to the oven and bake for a further 45-50 mins, or until a skewer comes out clean.
- Leave it in the tin for 10 mins, and then cool it on a wire rack.
- Enjoy.
