Coconut Twist is a mini collection of my favourite recipes using coconut products. Coconut oil and desiccated coconut feature in many recipes. However, many use coconut flour and coconut sugar in paleo, keto, vegan or plant-based diets or in specific cuisines. I’ve learnt that coconut sugar can be used in the same ratio as white or caster sugar. Coconut flour, on the other hand, absorbs a lot of liquid and should be used in a 1:4 ratio of plain flour. This is a light coconut satay sauce that is full of flavour. Use it as a dipping sauce or curry sauce base in a stir fry.
