Delicious Coconut Cake Ingredients
- 2 cups all-purpose flour
- ½ tsp kosher salt
- 2 tsp baking powder
- ½ cup unsalted butter (at room temperature and melted)
- 1 cup granulated sugar
- ½ cup coconut oil
- 4 large eggs, room temp
- ½ cup full-fat coconut milk
- ⅔ cup Organic Coconut Confetti
- 1 cup unsalted butter (at room temperature)
- ¼ tsp kosher salt
- 3 ½ cups confectioners’ sugar
- 2 Tbsp full-fat coconut milk
Step-by-Step Instructions
- Line three round cake pans (6-inch) with parchment paper. Grease them lightly and set them aside. Meanwhile, preheat the oven to 350°F.
- Mix dry ingredients: all-purpose flour, baking powder, and salt.
- Take a stand mixer bowl and beat coconut oil, melted butter, sugar, and eggs until you get a pale colour mixture.
- Then slowly add the dry mixture and mix on slow speed until combined. Pour in Organic Coconut Confetti and mix for 30 seconds.
- Now divide the batter into three prepared pans and bake for 30-35 minutes. To check the readiness, insert a toothpick in the middle of the baked cake. If it comes out clean, your cake is ready.
- Allow the pans cool for 5 minutes in the oven. Unmold the cakes and let them cool on a wire rack at room temperature.
- Take a stand mixer’s bowl and beat butter until smooth. Add coconut milk, salt, and confectioners’ sugar, and slowly mix until you get smooth buttercream. Then increase the speed to medium and beat until the buttercream is smooth, airy, and creamy.
- Transfer this buttercream to a piping bag with a medium star tip.
- Level the cake layers with a sharp knife and place one round on the cake stand. If you don’t have a cake stand, you can use a serving dish instead.
- Pipe star spikes all over the cake layer and top with the second cake round.
- Again, fill the cake layer with buttercream and place the 3rd layer on top.
