Coconut Prawns On The Side Recipe

Coconut Prawns Recipe is a tasty entree or dish to have on the side. It is a simple yet tasty dish that will be a hit with coconut and seafood lovers.

What you’ll need:

  • 175g  coconut flour
  • 1.5 teaspoons of baking powder
  • 1 egg (room temperature)
  • 150 ml of water + 2-3 ice cubes
  • 1 cup of panko breadcrumbs
  • 1 cup of desiccated coconut
  • 15 – 20 prawns (depending on the size)
  • 3-4 tablespoons of coconut oil
  • Salt and pepper to taste

What to do:

  1. Sift 125g of flour in a bowl. Add baking powder and salt and pepper.
  2. Mix it all together, and then add the egg.
  3. Add the iced water and whisk everything together to form a smooth batter.
  4. Combine the breadcrumbs and coconut in a bowl, and add a bit more salt and pepper if you like.
  5. Add the remaining flour to a bowl and coat the prawns one by one.
  6. Dip the prawns in the batter, then coat the prawns with the breadcrumbs and coconut mix.
  7. Put them on a plate ready to cook.
  8. Heat the coconut oil on medium heat in a wok or nonstick pan. Sprinkle a few breadcrumbs in the oil. It is ready when it starts to move around. Turn the heat down if the breadcrumb looks like it is burnt straight away.
  9. Fry the prawns in the wok or pan till cooked and golden and place on a plate with a paper towel.
  10. Allow them to cool
