Organic coconut flour is a grain-free, wheat-free, and naturally gluten-free alternative to other flours. It is a naturally sweet, fine powder suitable for those following a paleo, gluten-free or plant-based lifestyle. Producers make coconut flour by removing fresh organic coconut meat from the coconut, drying it, and extracting oil. Then, they grind the dried meat into a powder resembling wheat flour. Like other flours, you can use Coconut Flour to make bread, muffins, cookies, fritters, pancakes, or slow-cooked creations. However, its high fibre content and density mean you cannot use Coconut Flour in the same ratio as other flours. It will require more liquid and additional eggs added to a recipe. 1 cup wheat flour = 1/3 coconut flour, Add 1 egg and 1/3 cup of extra liquid for every 1/3 cup of organic coconut flour. Coconut Twist is a mini collection of my favourite recipes using coconut products. Coconut oil and desiccated coconut feature in many recipes. However, many use coconut flour and coconut sugar in paleo, keto, vegan or plant-based diets or in specific cuisines. I've learnt that coconut sugar can be used in the same ratio as white or caster sugar. Coconut flour, on the other hand, absorbs a lot of liquid and should be used in a 1:4 ratio of plain flour. Some days I only have 1 banana and feel like making and eating banana bread. I only want a petite banana bread loaf to last a few days. This recipe can be doubled to create a larger loaf for those days when you want something bigger. This is a light coconut satay sauce that is full of flavour. Use it as a dipping sauce or curry sauce base in a stir fry. Coconut Satay Sauce Ingredients: 1/4 cup of peanut butter 1 TBS Coconut Oil 1/4 cup of Coconut Chips 1 tsp of curry powder 1/4 tsp of ginger powder 1/4 tsp ground cumin 1/4 tsp turmeric 1 TBS ketchup manis 1 tsp soy sauce 4 curry leaves A squeeze of lime juice 1/2 - 1 cup of water (use less or more depending on how thick you'd like the sauce) Optional for Extra Kick: Chilli flakes (to taste) If you'd like your coconut satay sauce to have a bit more kick, add some chilli flakes and double or triple the amount of the powdered ingredients. This is an easy-to-make Coconut Crab Curry Recipe! Loved by anyone who loves curries and crabs. In the recipe, I use blue swimmer crabs as I find them easier to prepare. You can also use Mud crabs. **I also use a spice blend - South Indian Seafood Masala, from Gewurzhaus.
